Chicken Marbella

2 Large chicken breasts cut into 2 pieces each.  More if they are from super large and happy long living chickens
2 cloves of garlic, minced
2 Tbsp oregano
¼ cup apple cider vinegar *
¼ cup olive oil
½ cup prunes
¾ cup olives w/ pimentos
¼ cup capers
2 bay leaves
⅓ cup brown sugar
½ hard cider **
salt and pepper
 
* I didn’t have red wine vinegar which is what is typically used.  I used apple cider vinegar and it worked nicely.
** We are more of red/rose people.  But we didn’t have any of that either so I used a hard pear cider.  It worked just fine and I didn’t notice a difference between this and white wine.  

Stir together all the ingredients except the chicken breast pieces, I skip the bowl and do this in a baking dish.   Nestle the chicken into the sauce and bake @ 400F for about 30 minutes.  I served it with couscous.  Delicious.
