Yesterday was Banana bread day.  I love banana bread, but amusingly I don’t like bananas.  When I have to eat one I eat them before they are ripe.  I’m not sure why I don’t like them, maybe force fed them as a child.  Thankfully, banana bread and smoothies were invented and I never have to eat a banana in it’s natural form, ever.  This is my go to recipe for banana bread, it’s super easy and delicious.  I don’t like chocolate chips in my banana bread, but the kids do.  This loaf was made for them and my Hubby.   

Aunt Holly’s Banana Bread

  • 3 to 4 ripe bananas
  • 1/4 cup melted butter
  • 1 cup sugar
  • 1 1/2 cups flour
  • 1/4 teaspoon salt
  • 1 egg, beaten
  • 1 teaspoon baking soda
  • Chocolate chips (as many as you want!)

Preheat oven to 350°F. Mash the bananas in a bowl. Add all the remaining ingredients and mix well with a wooden spoon. Bake in a buttered loaf pan until a toothpick stuck into the bread comes out clean, 55 to 60 minutes. Slice and serve.
