Meal Planning for the Week of September 2, 2012

Summer is almost over.  Many popsicles have been consumed.  Days at the spray park are pretty much over.  Camping will be forever etched in the minds of my little boys.  Boats will be in their dreams for years to come.   My boys tried screamers for the first time, yes ALL of my boys.  We went to a parade and took the bus.  Deep fried pickles were consumed.  A rodeo was experienced.  Many hours were spent in the back yard and the sprinkler.  I got to show my littles the country and I don’t just mean a farm that is 40 minutes away from our house, I mean real country where there are working farms and fields of wheat.  It was a good summer.    

My oldest starts school on the 4th.  Tim has taken the morning off and we will walk him to school together on his first day.  All his school supplies have been purchased and we got a new lunch kit (space themed!) to make staying at school for lunch fun and exciting. He's a little nervous right now but I'm sure after the first week he will be having fun and enjoying the return to routine.

My baby starts preschool this year, two days a week he'll be at his grandparents and preschool for the morning.  I still have no idea what I'm going to do with myself.  I'm a little lost.  I dived headfirst into being a mommy and left every other part of my identity behind...  I'm not sure who I am or what I want anymore.  I guess it's good I still get to be a mommy for 5 days a week, maybe more for me than him.

I am happy to get back to routine.  It means meal planning and organization.  I love summer and the food the comes with it.  Ice cream, BBQ, strawberries, peaches, raspberries, cold soups, margaritas and so many other delicious foods that just don't seem right in the fall/winter/spring.  It takes a toll on our budget not planning and going out more than normal so my wallet will thank me for getting back to routine.    

We've decided (by we, I mean I) to go all natural and if possible organic for our meat.  We are easing it back out of our diet and putting it back into a occasional thing not an everyday item.  It'll take a few weeks to get back to how we normally eat, and thats ok.  I'm not taking it out completely since I apparently have a severe B12 depletion and need to get that back to a normal level.  It also means that we will buy all of our meat in one week as opposed to spacing it out and getting what we need for the week since I don’t have time to go to the farmer’s market every weekend.  

    Breakfast: Cereal/Oatmeal/Toast
    Lunch: Out - doing the last of our before school errands.
    Dinner: Roast Chicken with Taters and Veggies
       Other: Make Muffins for snack for school this week - Blueberry/Raspberry???

    Breakfast: Oatmeal with Fruit and Orange Juice
    Lunch: PB and J for kids.   Leftovers (?)
    Dinner: Black Bean Quesadillas and Slaw
       Other: Make chicken stock from leftover chicken last night

    Breakfast: Oatmeal with Fruit and Orange Juice
    Lunch: Turkey Sandwich with Carrots, Grapes, Treat. < this is Riley’s lunch, more on that to come!
    Dinner: Chicken Fingers with Mashed Potatoes and Kale Salad

    Breakfast: Oatmeal with Fruit and Orange Juice
    Lunch: Leftover chicken fingers with cheese and crackers, carrots, and grapes
    Dinner: BBQ Spiced Salmon with Pineapple Salsa and Veggies

    Breakfast: Oatmeal with Fruit and Orange Juice
    Lunch: Turkey Sandwich w/ Carrots, Grapes, and Treat.
    Dinner: Pasta/Pesto/Peas/Bacon

    Breakfast: Oatmeal with Fruit and Orange Juice
    Lunch: Pasta with Peas and Bacon, Grapes, and Treat
    Dinner: Pizza with Salad

    Breakfast: Waffles w/ Blueberry Syrup
    Lunch: Veggies and Hummus and Pita
    Dinner: Happily Ever After Pork Chops pg. 210 TLC

There it is,  two months of no meal planning and now back to normal.  The list is a little bigger than normal just so we can get some of the basics that we have run out of but nothing to gross.
