Short weeks always sneak up on me and it's Wednesday by the time I think to post the meal plan. It's ok, it's only for me anyways. Monday nights dinner was good. Basically a vegetable hash with a light balsamic vinaigrette on top. The next day for lunch I added a fried egg on top to give it that extra notch of hashyness. I bought some southern style breaded fish filets at the grocery store the other day and the kids actually liked them! So did Tim and I! It was amazing. We all ate dinner and no one complained. Tonight is soup. The kids hopefully will like it. It's noodles, tofu, and veggies. What's' not to like? Also, I just realized that I will have had fish 3 times this week (including one lunch) woah. It's like I'm trying to be healthy. Making dinner for my FIL this weekend. It's our special or fancy or little bit nicer than normal dinner this week. Maybe it should be called our dinner that takes a little bit longer than normal? That would be more accurate.
We have a soccer tournament on Sunday to go to. Riley is playing two games and he gets a medal at the end. He's super excited and he doesn't even know about the medal yet. Should be fun and the games aren't too early so I am totally ok with it. I have a coffee habit when I have to get up early. I have managed to get it down so it only happens on the weekends. I look forward to it.
