Another Recipe, Another week gone by.
This week started out very promising. Until Tuesday when my Mom came over and bought us pizza for dinner. I was still doing good after that watched my points and was still on my way to a weight loss goal. Then Wednesday came around and we went out for dinner with my in-laws to a buffet. Now I didn't think I went to crazy only had two plates that were partially full and didn't have dessert because I had made cake for mom in law's b-day. The first plate was full of salad! But alas things did not work out well and I am still recovering from the tiny oopsy that ruined my weight loss for this week.
So yet another week stuck at 145. *sigh* Only thing I can do now is pull up my socks and try again next week! I would like to go get pictures done around my baby's birthday... that's 5 weeks away. I'd love to be down 10 pounds. No more distractions I don't want to be the fat mommy!!! That right my short term goal is to get to 135 lbs for October 6th. I'm hoping that writing that here will give me the motivation. I know what I need to do I just got to do it! I've been going for walks almost everyday and when I'm not I've been doing some exercises dvd's (that really really suck) but I've still been doing them. Lets hope it pays off!
Anyways, last night for dinner and back on plan I made Grilled Beef Fajitas. Yummy. Hubby and I also decided to channel our inner Mexican Momma and make homemade tortillas. It worked fantastic! We used the pasta maker to get them to the right thickness and threw them in our cast iron grill pan. Yummy! I would definately reccomend trying it if you haven't. The baby loved to help and got flour all over the floor but we all had fun and thats what matters in the end!
Grilled Beef Fajitas!
2 medium onion, sliced into rounds
2 medium summer squash, sliced lengthwise (I used a zucchini and summer squash)
1/8 tsp salt or to taste
8 oz raw lean steak, thinly sliced against the grain
1/8 tsp black pepper, or to taste
½ cup salsa
4 medium tortillas, flour, fat free (our homemade ones were flour and fat free!)
Preheat grill pan. When hot, grill onion slices until soft and browned, about 8 minutes. Coat squash slices with cooking spray, salt them and grill them till soft about 5 minutes. Take both out of grill pan and put to the side.
Salt and Pepper the steak, put in grill pan and cook until nicely browned. About 5 minutes. Add back the summer squash and onion mixture and heat evenly.
To assemble fajitas, put 2 tablespoons of salsa on each tortilla. Top each with ¼ on onions, squash and beef. Roll up and serve!
4 Servings, 3 ww points each! Yummy! (I did add fat free sour cream for the baby and hubby!)
