All I have left is ground turkey and a zucchini...
Yes, it was Monday evening and about an hour before dinner and all I have left in the fridge is some lean ground turkey and a zucchini. I could have to the store and got something but I'm trying to stick to my budget for the month and that means working with what I have. Here's what I came up with!
Turkey and Zucchini Tomato Sauce with Penne
1/2 lb lean ground turkey
Basically I stuck the ground turkey, onion and zucchini in the frying pan and cooked until the meat was browned, about 12 minutes. Then I added the rest of my ingredients and let it simmer for about 20 minutes. It was quite tasty for not having anything specific in mind when I made it. I served it over some organic penne.
Serves 4 or 3 Adult servings and 2 baby portions. About 7 points per serving (1 cup pasta, about ½ cup of sauce).
On another note, I'd just like to get this off my chest. Flaky people that act superior really piss me off. Now, I'm not saying that they do this all the time but this person definitely has his/her moments. Please don't say you are going to do something and then do nothing about it when you know it's important to people that should be important in your life. I hope that everything goes well with this event that you were supposed to "handle" for the sake of the people that the event is for. I will try and do my part to make sure it goes off without a hitch. But please don't expect me to be happy with you or to thank you for your hard work as I feel you really have done nothing. I really think your a selfish person and over the past few months you have lost a lot of my respect for you.
That's really I wanted to get off my chest... except for one more thing... Please don't ever stick my baby in the bathroom with a cat who is never around babies and a dirty litter box ever again! Or else this time I might have to say something and I really don't think you'd like what I have to say.
